I just purchased a 2007 200 and have only had to fill it up once so far. However, when I did fuel up the serviceman mentioned the chain was missing. Is this an easy fix?

Should be. What's left there yet. I used old key chain chains.

Maybe reach your finger in there and see if the chain is just laying in there and re-attach it?!?! Easy fix! I did that with my 190.
That's easier than figuring out what BB meant up there!

Chain is likely laying in the tube. Reattach it or you may leave it laying on the swim platform as you drive away. This will force you to buy a new one like me. If you can't get to it, it it is gone, remove the filler hoses from the piece mounted to your hull. There is a screw there than can be removed so you can attach a new chain with a small eye attachment.
